This is the ultimate meal prep chicken recipe. It’s so easy to make (you literally place everything in a slow cooker and stir!) and can be used in many ways. Try it in tacos or burritos, on sandwiches or wraps, as a pizza topping, a jacket potato filling or served with rice or pasta. It’s even great with a side of veg or mixed through salad.
Ingredients
- 500g Coles RSPCA Approved Chicken Breast Fillets
- 200g chicken thigh fillets, fat trimmed (see notes)
- 2 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp ground paprika
- 1/4 tsp Mexican chilli powder
- 250ml (1 cup) smoky barbecue sauce
- 1 tbsp apple cider vinegar

Step 1
Place the chicken in the slow cooker. Add the remaining ingredients and stir until combined.

Cover and cook on Low for 6 hours, turning the chicken halfway through cooking (see notes).

Transfer chicken to a plate or board. Use 2 forks to coarsely shred the chicken. Return chicken to slow cooker and stir with the liquid until well combined.
